Eating Healthy Doesn't Have To Be Boring

MAPLE BUTTER PECAN TRUFFLES

INGREDIENTS

2 tbsp butter, softened
1 1/2 oz cream cheese, softened
1 cup erythritol - Swerve
1 tsp pure vanilla extract
1 tsp maple extract
1 cup finely chopped toasted pecans
1 tbsp coconut oil
1/2 cup sugar free dark chocolate chips

INSTRUCTIONS

In a large mixing bowl, mix together the butter, cream cheese, erythritol, vanilla extract, maple extract, and half of the pecans until the ingredients are well combined. 

Line a large plate with parchment paper, scoop the mixture and roll into 1 inch balls. Place them in the freezer. 

In a microwave safe bowl, melt the chocolate chips and dip each ball into the chocolate, sprinkle with pecans and freeze for an additional 30 minutes to an hour. Store in airtight container and ENJOY!
